The Salami Sessions Pre-Sale Tickets

The Salami Sessions are hands on, authentic, one day instructional workshops in the art of salami making. A unique grassroots cultural experience, the sessions are aimed at first time makers and novices or those wishing to hone their skills. Held at a beautiful farm homestead an hour north of Melbourne in Seymour the workshops are kept intimate and small for the best possible experience.

Salami Sessions Program

8:00am         Breakfast/Guest Registration/Welcome
8:30am         Farm Tour/Meet the resident pig ‘Penelope Cruz’
9:00am         Boning demo
9:45am         Porchetta demo
10:15am       Salami tasting
10:30am      Salami making demo
11:00am       Mincing/Mixing (hands on)
12:30pm      Lunch – Wood fired Porchetta
1:30pm        Group splits in 2: Sausage making (Group 1) and Filling (Group 2)
2:30pm        Groups switch: Sausage making (Group 2) and Filling (Group 1)
3:30pm        Afternoon tea and curing advice
4:15pm        Wine tasting
5:00pm       Wrap up and goodbyes 🙁

What you get:

– 3kg of your own sausages you’ve made at the session
